Therapeutic and medicinal uses of olive oil and importance of phenolic and volatile compounds

This mini review gives an overview of the importance of olive fruit, oil and leaves. It also provides a
general view of the phenolic and volatile compounds in the olive, explaining the extraction procedures
and the analytical tools used for determining these compounds. Therapeutic and medicinal uses were
also investigated.
